While I don’t have much of a sweet tooth, my husband sure does! Every week or so, he randomly says…, “I want a Snickers Bar!” Well, If you’ve ever flipped over a traditional Snickers Bar and taken a look at the ingredients, you will see why making a natural variation with wholesome ingredients would be a good idea. So, I set out to create a healthier alternative that still tasted like the real thing.

- Medjool Dates: Yes, you can use other types of dates, but Medjool is by far my favorite! They are larger, slightly darker in texture, and have a powerfully rich caramel flavor (that mimics the caramel sauce in a Snickers bar; this makes them perfect for this date Snickers recipe. Your dates will likely come with a pit in them, so be sure to slice and remove the bit before filling each date.
- Almond Butter: I use my Homemade Almond Butter, but you can also use your favorite store-bought. Additionally, you can substitute natural peanut butter, or any nut butter to your liking.
- Peanuts: You will want to chop your peanuts for this recipe. You will stuff some peanuts inside the dates, however, you will also want to reserve some for topping them once they are dipped in the chocolate. I like to use unsalted peanuts for this recipe, but salty peanuts will also work.
- Coconut Oil: The coconut oil helps make your melted chocolate shiny, and also keeps it from drying out, making it easier to work with. You will want to use an organic unrefined oil.
- Chocolate Chips: To keep this recipe refined sugar-free, you will want to use chocolate chips or a chocolate bar such as Hu. Their chocolate has no dairy, no GMOs, no emulsifiers, no lecithins, no gluten, no refined sugar, no cane sugar, and no sugar alcohols. You could also use dark chocolate chips, or milk chocolate if you like.
- Flakey Sea Salt: I love sprinkling a little flakey sea salt on top. The subtle hint of salt balances out the flavors extremely well, and makes this simple treat a little more fancy.

Substitutions And Variations
- Nut Butter: Feel free to swap the almond butter for peanut butter, cashew butter, or any seed butter that you like.
- Nuts: If you don't enjoy peanuts, you can use almonds, cashews, or even hazelnuts instead.
- Chocolate: You can skip dipping the dates in chocolate, or, swap dark chocolate for milk chocolate, semi-sweet, or white chocolate.
- Toppings: Top with shredded coconut flakes, pistachios, or shaved almonds.
How To Make Snicker Dates

Step 1. Slice your dates lengthwise and remove the pit. Place them slit-side up on a parchment-lined baking sheet.
Step 2. Using a piping bag, pipe out ¼ teaspoon of Almond Butter into the center of the date, and repeat for all remaining dates.
Step 3. Top each stuffed date with a pinch of chopped peanuts, and push the date closed, then secure it with a toothpick.
Step 4. Fill a saucepan with 1-2 inches of water and bring it to a simmer on the stove. Place a shallow heat-safe mixing bowl over the saucepan. Be sure that the bottom of the bowl does not touch the water in the saucepan. Add your chocolate and coconut oil into the heat-safe mixing bowl, and stir. The steam from the water will melt your chocolate. Continue stirring until there are no lumps and your chocolate is melted and smooth. This process should only take about 5 minutes. Once melted remove from the heat. Be careful the mixing bowl may be hot (it’s best to wear an oven mitt, just to be safe).
Step 5. Use the toothpick to dip your dates into the melted chocolate, allowing the excess chocolate to drip back into the bowl. Place the chocolate-covered date back on the parchment paper. Use a second toothpick to remove the original toothpick from the stuffed date. Immediately top with small pieces of crushed peanuts and a sprinkle of flaky salt. Repeat the process for all of your remaining dates. Next place the baking sheet in the freezer for 15 minutes, so the chocolate can firm up.

- Slice & Pit all of the dates at once. For maximum efficiency, you want this process to be like an assembly line. Slice and pit all of the dates before you begin filling them with almond butter.
- Use A Piping Bag: If you have a piping bag handy, use it! This will allow you to pipe the almond butter into the dates and keep things clean, and also pretty.
- Be Ready: Have your dates stuffed with almond butter and peanuts before you melt your chocolate. This will ensure the melted chocolate does not start to lump up before you are ready to rock!
- Melting The Chocolate: If you can, use a double-boiler to melt the chocolate. I find this works much better than nuking it in the microwave.
- Use toothpicks: I find it easiest to stick a toothpick in the date to help me dip each one into the melted chocolate. Just stick a toothpick through the stuffed date, dip the date into the chocolate, and use a second toothpick to remove the initial toothpick.
