Snickers Stuffed Dates are a healthy twist on the classic candy bar. They are made with only six natural ingredients and are chewy and sweet, with just a hint of saltiness.
3-4tablespoonAlmond Butterif you are dates are large you might need 4 tablespoon (¼ cup)
2-3tablespoonPeanutschopped
1teaspoonCoconut Oil
6ozChocolate Chipsmelted
Flakey Sea Saltfor topping
Instructions
Slice your dates lengthwise and remove the pit. Place them slit side up on a parchment-lined baking sheet.
Using a piping bag, pipe out about ¼ teaspoon Almond Butter into the center of the date, and repeat for all remaining dates.
Top each stuffed date with a pinch of chopped peanuts, and push the date closed, then securing with a toothpick.
Next, melt your chocolate over a double boiler. (Step-by-step instructions are in the body of the blog post.
Use the toothpick to dip your dates into the melted chocolate, allowing the excess chocolate to drip back into the bowl. Place the chocolate covered date back on the parchment paper. Use a second toothpick to remove the original toothpick from the stuffed date. Immediately top with additional crushed peanuts and flakey salt. Repeat the process for all of your remaining dates.
Next place the baking sheet in the freezer for 15 minutes, so the chocolate can firm up.

Expert Tips And Notes
Slice & Pit all of the dates at once. For maximum efficiency, you want this process to be like an assembly line. Slice and pit all of the dates before you begin filling them with almond butter.
Use A Piping Bag: If you have a piping bag handy, use it! This will allow you to pipe the almond butter into the dates and keep things clean, and also pretty.
Be Ready: Have your dates stuffed with almond butter and peanuts before you melt your chocolate. This will ensure the melted chocolate does not start to lump up before you are ready to rock!
Melting The Chocolate: If you can, use a double-boiler to melt the chocolate. I find this works much better than nuking it in the microwave.
Use toothpicks: I find it easiest to stick a toothpick in the date to help me dip each one into the melted chocolate. Just stick a toothpick through the stuffed date, dip the date into the chocolate, and use a second toothpick to remove the initial toothpick.
Toppings: Make sure you top your Snickers Stuffed Dates right after you dip them in the melted chocolate so that everything sticks.
Chill: This step is going to be a challenge for some; you’ll need to allow these Snickers Stuffed Dates to chill in the freezer for 20 minutes in order for the chocolate to set.
