    You have to make these Prosciutto-wrapped dates! I’ve been making these bad boys for the past 15 years, and it’s always the first thing to disappear at parties. It’s that perfect balance of sweet, salty, creamy, and crispy—all in one bite!

    Whether you're hosting a holiday gathering, bringing something to a potluck, or just want an easy, impressive appetizer to have on hand, this one is a winner. The best part?     • Medjool Dates: I love using Medjool dates because they are so plump and naturally sweet, making them the perfect balance to the salty prosciutto and tangy goat cheese. When selecting Medjool dates, look for ones that are soft, glossy, and slightly sticky to the touch. Avoid dates that appear overly dry or crystallized, as they can be tough and less flavorful. Fresh, high-quality Medjool dates should have a deep caramel color and feel tender when gently squeezed.
    • Goat Cheese: This creamy, tangy cheese adds the perfect smooth texture to contrast with the chewy dates and crispy prosciutto. You can use plain goat cheese, but I enjoy using one infused with herbs like rosemary, thyme, or garlic for an extra layer of flavor. If you prefer a touch of sweetness, a honey-infused goat cheese also works beautifully in this recipe
    • Prosciutto: The crisp, salty bite of prosciutto ties everything together! When shopping for prosciutto, look for a good classic Italian Prosciutto, such as Prosciutto di Parma or Prosciutto di San Daniele. These varieties have a delicate, melt-in-your-mouth texture and a well-balanced saltiness that enhances the sweetness of the dates. Choose thinly sliced prosciutto with a nice marbling of fat, as this will help it crisp up beautifully when baked.

    Substitutions And Variations

    • Cheese: You can experiment with different cheeses like blue cheese, cream cheese or even a plant-based cheese if you'd like.
    • Spicy Kick: For a little hit of spice, drizzle some hot honey on top.
    • Prosciutto: You can swap the prosciutto for thin cut bacon. Just note it will be greasier. 

    How To Make Prosciutto Wrapped Dates

    Step 1. Preheat your oven to 400 degrees f. Line a large baking sheet with parchment paper.

    Step 2.  Slice each date lengthwise, without cutting all the way through, and remove the pit.

    Step 3. Fill the cavity of each date with about a teaspoon of goat cheese, then use your fingers to push the date back together.

    Step 4. Use a sharp paring knife to cut the prosciutto in half lengthwise, so each piece becomes two long strips. Wrap a small slice of prosciutto around each date and place seam side down on your prepared baking sheet. Repeat for all 12 dates.

    Step 5. Place your sheet pan in the oven and bake for 8-10 minutes or until the prosciutto is slightly crispy.

    Expert Tips And Notes

    • Use Good Quality Dates: Use organic medjool dates. They are plump, super soft and have a caramel-like taste to them. Be sure to check the inside of your dates once you remove the pit. If the inside appears black, throw it out as it is likely mold.
    • Don't Overstuff: You want to add just enough goat cheese to fill the dates without overstuffing them. If they are too full, the cheese may ooze out when baking.
    • Serve Warm: The best way to serve these dates is at room temperature or slightly warm. 
    • Make Ahead: When making this easy appetizer for a dinner party or holiday, I always assemble them in advance, then make them the day of.

    You don't have to bake them, but it enhances the flavors and makes the prosciutto crispy. 

    Can I cook these in an air fryer?

    Yes! Air fry at 375°F for about 7-9 minutes until the prosciutto is crispy.

    Can I make these stuffed dates ahead of time?

    Yes! You can assemble them a day in advance and refrigerate until you're ready to bake. Just pop them in the oven right before you are ready to serve.
