Like most people, I cherish peach season! And every summer, this salad is on repeat at our house. I like to think of it as a modern twist on the classic Caprese salad.
The creaminess of the burrata pairs beautifully with the juicy peaches, while the rich prosciutto adds a delicious contrast. It's the kind of dish that feels fancy but is actually super simple to make. You'll love how the combination of fresh, in-season ingredients turns into something so special.

Ingredients

- Organic Peaches: Fresh peaches work best for this dish. You will want them to be slightly soft, but not too firm. Also, you don't have to grill the peaches, but it does add a nice layer of smokiness to the salad.
- Avocado Oil: You will want to use Avocado oil when you grill the peaches as it has a high smoke point.
- Burrata: If you are dairy-free you can leave this out, or substitute with a dairy-free Ricotta such as Kite Hill ricotta.
- Prosciutto: If you can, try to find thinly sliced prosciutto. Creminelli is one of my favorites.
- Arugula & Baby Spinach: I really like the mix of peppery arugula and baby spinach. Arugula alone has a bit too much bite for me. To keep things simple, you can buy a bag of mixed greens and call it a day.
- Basil: Fresh basil adds a nice sweetness to this peach salad. You can also use any fresh herbs that you like.
- Olive Oil: Grab yourself a good olive oil. My favorite is TDC Mercantile.
- Flakey Salt And Black Pepper: Maldon's Sea Salt is wonderful and affordable.

How To Make Peach Burrata And Prosciutto Salad

Step 1. Heat your outdoor grill or grill pan to medium heat.
Slice the peaches in half, then brush the grill grates with a little bit of avocado oil.

Step 2. Place the sliced peaches on the hot grill, open-side down, and grill peaches for 2-3 minutes.
The peaches are ready when they start to caramelize and have some nice grill marks. Once ready, remove them from the grill and slice them into quarters.

Step 3. To assemble the salad, place a thin layer of greens in a large bowl or on a large serving platter. Arrange the peaches, burrata, and thin slices of prosciutto on top of the greens.
