    Raw Carrot Salad

    This Raw Carrot Salad is a tiktok phenomenon made of shredded carrots, coconut oil, apple cider vinegar, and sea salt. This hormone balancing snack provides many health benefits as it can help remove excess estrogen from the body, while also aiding in digestion and improving gut health.

    I came across the original raw carrot salad recipe when doing some research on hormone balancing while earning my Nutrition Certification.

    I stumbled upon the work of Dr. Ray Peat, who claimed that his shaved carrot salad can help maintain hormone balance (especially for those with estrogen dominance);  as the unique fiber found in raw carrots binds excess estrogen and endotoxins and carries them out from the body. This process allows the liver to more effectively regulate metabolism, balance estrogen levels, and help to minimize premenstrual symptoms (source).

    Benefits of raw carrot salad

    Dr. Ray Peat, a renowned nutritionist and biochemist, is a strong advocate for incorporating raw carrot salad into one's diet (source).

    According to Dr. Peat, raw carrots contain a unique fiber called pectin, which has been shown to have numerous health benefits. Pectin acts as a prebiotic, feeding beneficial bacteria in the gut and promoting a healthy digestive system (source).

    Additionally, carrots are rich in antioxidants such as beta-carotene and vitamin C, which help combat inflammation and oxidative stress in the body.

    Dr. Peat also notes that the natural sugars found in carrots provide a quick source of energy without spiking blood sugar levels, making them an ideal choice for those looking to maintain stable energy throughout the day.

    Overall, Dr. Ray Peat recommends raw carrot salad as a simple yet powerful way to support overall health and well-being (source).

    • Carrots: Organic is best, and you can really taste the natural sweetness. You can use regular orange carrots, or the multi-colored ones also work well! Also, carrots are loaded with beta carotene and Vitamin C.
    • Coconut Oil: Dr. Bronners coconut oil is my favorite. You can also use extra-virgin olive oil if you prefer.
    • Apple Cider Vinegar: You will want to get a good quality Apple Cider Vinegar, preferably one that is raw, unfiltered, and with "the mother". If you don't have apple cider vinegar, you can also use white vinegar, rice vinegar, lime juice, or a squeeze of lemon juice.
    • Sea Salt: I'm a big fan of using good quality ingredients, but it's even more important when the recipe only calls for a few items. That being said, Redmond Real Salt is a great option for salt.

    Step 1. Using a vegetable peeler, or julienne peeler, grate the carrot lengthwise and place the carrot ribbons in a large bowl.

    Step 2. Add the Coconut Oil, Apple Cider Vinegar, and Sea Salt and toss to combine.

    Substitutions and variations

    • Add-Ins: Try adding in fresh herbs, sesame seeds, or pumpkin seeds.
    • Oils: If you don't have coconut oil, you can use extra virgin olive oil or avocado oil instead.
    • Asian-Inspired: Add a splash of soy sauce, sesame oil, and rice vinegar to the dressing for a flavorful Asian twist. Top with chopped peanuts and sliced green onions for extra crunch.
    • Spicy: Kick things up a notch by adding a pinch of cayenne pepper or a dollop of sriracha to the dressing. Garnish with sliced jalapenos for an extra spicy kick.

    Tips and tricks

    • Shred Your Carrots In Advance: You can also use a food processor or box grater and grate your carrots in advance. You can store them in the fridge in an airtight container so they are ready to go when you want a shredded carrot salad.
    • Go Organic: This Raw Carrot Salad uses very simple ingredients, so do your best to use Organic products.

    Serving and storage

    You can enjoy this grated carrot salad between meals, or alongside a meal. 

    If you want to prep your carrots in advance, peel or grate 4-5 carrots into thin slices and store them in a food storage container. When you are ready to make your simple carrot salad, remove about 30-50g of carrots and combine them with the Apple Cider Vinegar, Coconut Oil, and Sea Salt, and serve.

    Can I use pre-shredded carrots?

    While pre-shredded carrots are convenient, they are typically not as fresh or flavorful as shredding them yourself. If using pre-shredded carrots, be sure to check the expiration date and give them a good rinse with some vinegar before using.

    Can I add other vegetables to my raw carrot salad?

    Absolutely! Feel free to get creative and add other vegetables like shredded cabbage, thinly sliced bell peppers, or julienned cucumbers for added crunch and flavor.

    Can I make carrot salad in advance?

    Raw carrot salad can be made ahead of time and stored in the refrigerator for up to 2-3 days. Just be sure to store it in an airtight container to keep it fresh.
