Slice each date lengthwise, without cutting all the way through, and remove the pit.
12 Medjool Dates
Fill the cavity of each date with about a teaspoon of goat cheese, then use your fingers to push the date back together.
3-4 oz Goat Cheese
Use a sharp paring knife to cut the prosciutto in half lengthwise, so each piece becomes two long strips. Wrap a small slice of prosciutto around each date and place seam side down on your prepared baking sheet. Repeat for all 12 dates.
