- Asparagus: Look for organic fresh asparagus stalks. I like the thin spears as opposed to the thicker asparagus, but either will work. When choosing asparagus at the grocery store, you want to make sure each stalk is firm in texture and bright green in color. You also want to make sure the tips are firm and closed, and that the bottoms are not dry.
- Prosciutto: Thinly sliced prosciutto like prosciutto di parma.
- Spreadable Cheese: I use a dairy-free spreadable cashew cheese from Treeline, however, if you enjoy dairy you can use any soft cheese that you enjoy.
- Olive Oil: Look for a good quality organic extra virgin olive oil or olive oil spray. You can also use avocado oil.
- Sea Salt & Black Pepper: Make sure you use a good quality flakey sea salt. My favorite is Maldon's sea salt.
- Parmesan Cheese: The Parmesan cheese is optional, but a little sprinkling of good quality Parmesan is delicious.

Step 2. Trim the tough ends of the asparagus and divide the individual spears of asparagus into 6 bunches consisting of 6-7 spears.
Step 3. Lay out a strip of prosciutto and add a little bit of the spreadable cheese to the center of the prosciutto slice.
Step 4. Place 1 small bunch of asparagus on top of the cheese and roll the piece of prosciutto around the asparagus. Repeat for the other 5 bunches.
