Ingredients
- Raw Almonds: You can use any almond variety you have on hand, however I prefer organic unsalted almonds. You can get them in bulk at Costco, or find them at any grocery store. While good quality organic almonds can be expensive, buying them in bulk and making your own is still more cost-effective than purchasing a jar of high-end almond butter at the grocery store.
- Sea Salt: Any sea salt will work, however, something like Real Salt is a great option, as it includes trace minerals.

Instructions

Step 1. Preheat the oven to 350 degrees f.
Step 2. Line a baking sheet with parchment paper and spread the almonds out in an single layer.
Step 3. Roast the almonds for 10-12 minutes, or until slightly golden brown. Allow them to cool for 5-10 minutes, or until they are warm but not hot.
Step 4. Place the slightly warm almonds in the food processor, along with the salt, and blend for 3-5 minutes. The almonds will start to look crumbly, then they will turn into a ball, and finally, the almonds will become creamy. During this process, you will need to stop the food processor periodically and scrape down the sides of the bowl.
Step 5. Once the almonds have become creamy, add any extra add-ins. Blend again for another 1-2 minutes. The mixture may clump up a bit again, but keep blending until it eventually smoothes out into a paste consistency.
Step 6. Remove almond butter from the food processor and place in a mason jar or weck jar. Secure with a lid and store in the refrigerator for 2-3 weeks.
Substitutions and variations
- Use Different Nuts: You can use half almonds and half cashews for a fun twist. You can also omit the almonds altogether and use cashews, peanuts, or pecans. My favorite variation is making cashew butter, but please note it is not keto!
- Add-Ins: Try adding cinnamon, vanilla extract, or your favorite low-sugar sweetener like monk fruit.
- Non-Keto: For a non-keto version, if you have a sweet tooth try adding a tablespoon or two of raw organic honey for a touch of sweetness. This is my favorite variation!

Storage
Store your Keto Almond Butter in an airtight container in the refrigerator for up to two to four weeks. If your almond better gets a little hard in the refrigerator, let it sit out at room temperature for a few minutes and it will soften right up!
