Line a baking sheet with parchment paper and spread the almonds out in an single layer.
Roast the almonds for 10-12 minutes, or until slightly golden brown. Allow them to cool for 5-10 minutes, or until they are warm but not hot.
Place the slightly warm almonds in the food processor along with the salt, and blend for 3-5 minutes. The almonds will start to look crumbly, then they will turn into a ball, and finally, the almonds will become creamy. During this process, you will need to stop the food processor periodically and scrape down the sides of the bowl.
Once the almonds have become creamy, add any extra add-ins. Blend again for another 1-2 minutes. The mixture may clump up a bit again, but keep blending until it eventually smoothes out into a paste consistency.
Remove almond butter from the food processor and place in a mason jar or weck jar. Secure with a lid and store in the refrigerator for 2-3 weeks.
