For this recipe, you can use either full-fat cottage cheese or low-fat cottage cheese, but avoid fat-free cottage cheese as it does not taste the same!
- Bread: You can use any kind of bread that you enjoy! I personally love baking sourdough bread, but you can use whole-grain bread, gluten-free bread, or any type of bread your heart desires.
- Heirloom Tomatoes: Heirloom tomatoes are my absolute favorite variety to use in this recipe. They are packed with flavor and incredibly juicy. If it's not heirloom season, feel free to use any tomato you have on hand.
- Fresh Basil: I grow basil in my garden and every summer I have so much of it! This is a great way to work it into recipes. If you don't have fresh basil you can use dried, but it's not the same.
- Extra Virgin Olive Oil: Bring out your high-quality extra virgin olive oil for this! As you build out your pantry consider having a day-to-day olive oil that you use for cooking and a nice finishing oil that you use to top dishes with.
