    Vegan Blueberry Cobbler

    My go-to quick and easy dessert is a cobbler. This vegan blueberry cobbler recipe is so simple and easily adaptable to meet any dietary requirement. If you are not a fan of blueberries, check out my Mixed Berry Cobbler or my Apple Cobbler, both are incredibly delicious.

    Also, for a fun twist, you can turn this Blueberry Cobbler into miniature individual cobblers by placing the blueberry mixture in small ramekins before you bake it.

    What’s The Difference Between A Crisp And A Cobbler?

    Crisps and cobblers are both delicious fruit-based desserts, however, the main difference lies in their toppings – crisps have a crispy, oat-based topping, whereas cobblers have a softer, biscuit-like or cake-like topping. Both offer a wonderful way to enjoy seasonal fruits in a comforting dessert.

    Ingredients

    For The Filling

    • Blueberries: Fresh and in-season. They will taste much better and will not require any sugar to flavor the berry mixture.
    • Gluten-Free Flour: You can use any gluten-free flour here, however, I prefer 1:1 baking flour like Bob’s Red Mill 1:1 Gluten Free Flour. You could also use arrowroot powder or cornstarch.
    • Lemon Zest: This will add a nice additional burst of lemon flavor to your cobbler, without making it sour which can happen if you use lemon juice.

    For The Topping

    • Gluten-Free Flour: You can use any gluten-free flour here, however, I prefer 1:1 baking flour like Bob’s Red Mill 1:1 Gluten Free Flour. You could also make your own gluten-free flour blend by using ½ gluten-free flour and ½ almond flour.
    • Sea Salt: Any sea salt will work. Redmond Real Salt is a great option.
    • Baking Soda
    • Coconut Oil: I really like the flavor of Coconut Oil (Dr. Bronners), as it adds a touch of sweetness, and also keeps the recipe Dairy-Free. You can also swap out the coconut oil for vegan butter.
    • Maple Syrup: If possible, organic maple syrup with no additives is best.
    • Vanilla Extract
    • Cinnamon
    Vegan Blueberry Cobbler Ingredients. There are blueberries in a bowl, flour, vanilla extract, maple syrup, a whole lemon and coconut oil.

    Step-By-Step Instructions


    1. Preheat the oven to 350 degrees.



    2. In a large bowl, combine the fresh blueberries, 1 tablespoon gluten-free flour, and lemon zest. Stir gently until the flour has dissolved.



    3. In a small bowl, combine the dry ingredients, 1 cup gluten-free flour, sea salt, baking soda, coconut oil, maple syrup, vanilla extract, and cinnamon. Mix well until a smooth dough forms.



    4. Transfer the blueberry filling into a 9x9 baking or pie dish, then add the dough on top of the blueberries. You can drop pieces of dough onto the fruit for a more rustic approach, or you can press the dough out and use a biscuit cutter to create uniform pieces.



    5. Bake for 35-40 minutes or until the blueberries are bubbling and the topping is golden brown.



    6. Remove from the oven and allow the cobbler to set for 10-15 min. Serve warm or at room temperature. Add a scoop of vegan vanilla ice cream on top if you choose!

    Tips And Tricks

    • Use Fresh Organic Blueberries: Blueberries are the star of the show, so you want to make sure you select the best quality possible. When in season organic blueberries are in abundance and you can often find them on sale at your grocery store. You can stock up and freeze them, however, be sure to defrost them before making this cobbler.
    • Serve Warm: This gluten-free blueberry cobbler tastes best when served warm or at room temperature. For an added bonus top it with your favorite vanilla ice cream.

    Variations And Substitutions

    • Extra Sweetness: If you use blueberries that are fresh, ripe, and in season, they should be sweet enough on their own. If you want to add an extra touch of sweetness, feel free to add 2-3 tablespoon coconut sugar to the blueberry mixture before adding the topping.
    • Different Fruit: You can certainly mix and match the fruit in this vegan cobbler recipe. If you don't want to use only blueberries try mixing in other fresh berries. A combination of fresh strawberries, blackberries, and blueberries is simply delicious.
    • Non Vegan: If you don’t need to keep this recipe vegan you can swap out the coconut oil for butter or ghee.
    • Flour Substitute: You can also use other gluten-free flours like oat flour or coconut flour. If you don't need to keep this gluten-free you can substitute for all purpose flour.

    Frequently Asked Questions

    Can I Use Frozen Blueberries?

    You can certainly use frozen wild blueberries, however, your filling will be thinner, so I suggest adding an additional tablespoon of gluten-free flour to the blueberry mixture. Also, if using frozen blueberries be sure to thaw and drain them before using.

    How Do You Thicken A Cobbler?

    The thick and fruity sauce is an important part of a great cobbler. To ensure the sauce is thick as opposed to runny, you will want to combine the fruit with some gluten-free flour (you can also use cornstarch). This will help thicken up the juices that are released when the berries cook, and provides a nice luscious sauce to boot!

    How to Serve

    This Vegan Blueberry Cobbler tastes fantastic straight out of the oven or at room temperature. You will want the Vegan Cobbler to sit for 10-15 minutes once you remove it from the oven, so it can set. If serving the blueberry cobbler the next day,  pull it out of your fridge about an hour or two before you want to serve it.

    How To Store

    Once the cobbler cools place in an airtight container or cover it with plastic wrap. Place it in the refrigerator for 2-3 days (if it lasts that long).
