This quick apple cobbler is one of my go-to dessert recipes, especially during the busy fall season when I don’t have time to prepare an apple pie. With just a few simple steps and high-quality ingredients, this recipe captures all the comforting flavors and textures of the classic dessert without compromising the flavor.

Ingredients
For the apple filling:
- Pink Lady or Honeycrisp Apples: For best results use fresh apples, in-season. Both these apple varieties have a slightly tart flavor but are also sweet. This helps reduce the amount of sugar you need to add.
- Gluten-Free Flour: The gluten-free flour is used to help absorb some of the liquid in the cobbler filling. If you are not gluten-free, you can use regular all-purpose flour.
- Lemon Juice: You will want to use fresh lemon juice, not the jarred variety. This will add a nice additional burst of flavor to your cobbler, and help the apples from oxidizing and turning brown.
- Apple Pie Spice: I use this Apple Pie Spice from Primal Palate, which is a blend of Saigon Cinnamon, Ginger, Allspice, Cardamom, and Nutmeg. If you don’t have this spice mix, you can either make your own or substitute it with cinnamon and nutmeg.
- Coconut Sugar: Coconut sugar is not refined, and a great replacement for white sugar.
- Unsalted Butter: If possible, use a good quality unsalted butter like Kerrygold. If you cannot handle butter, you can also use ghee.
For the cobbler topping:
- Gluten-Free Flour: You can use any gluten free flour blend, however, I prefer 1:1 baking flour like Bob’s Red Mill 1:1 Gluten Free Flour. Of course, if you don’t want to make this gluten-free, you can use regular flour.
- Sea Salt: Adding salt to a dessert may seem odd, but salt helps bring out all the flavors. Don’t skip it! I like using Redmond Real Salt.
- Baking Powder: Is used as a leavening agent. It helps to lighten the cobbler topping.
- Coconut Oil: I like the flavor of Dr. Bronners Coconut Oil. It adds a touch of sweetness and keeps the dessert feeling a little lighter. If you don’t like using coconut oil you can also use melted butter or ghee..
- Maple Syrup: Maple syrup is a natural sweetener, which is one of the reasons I love it. If possible, get yourself an organic maple syrup with no additives.
- Vanilla Extract: Vanilla adds additional warmth and flavor to the cobbler topping.
- Apple Pie Spice: Again, substitute cinnamon here if that’s what you have on hand. It will still taste great.

Substitutions And Variations
- Flour Swaps: You can use almond flour, almond meal, oat flour, or any gluten-free flour blend instead of the 1:1 gluten-free flour. Also, feel free to make this with regular all-purpose flour if you are not gluten-free.

How To Make Apple Cobbler

Step 1. Preheat the oven to 350 degrees.
Step 2. In a large bowl, combine the sliced apples, 1 tablespoon of gluten-free flour, lemon juice, apple pie spice, and coconut sugar. Stir gently until the flour has dissolved.
Step 3. In a small bowl, combine 1 cup gluten-free flour, sea salt, baking powder, melted coconut oil, maple syrup, vanilla extract, and apple pie spice. Mix well until a smooth dough forms.
Step 4. Transfer the apple slices into a greased 9x9 baking or pie dish, and add a few pats of butter on top of the coated apples, then top with the dough. You can drop pieces of dough onto the top of the apples for a more rustic approach, or press the dough out and use a biscuit cutter to create uniform pieces.
Step 5. Bake for 35-40 minutes or until the fruit is bubbling and the topping is golden brown.
Remove from the oven and allow the cobbler to set for 10-15 min. Serve warm or at room temperature. Add a scoop of your favorite ice cream on top if you choose!
