1teaspoonLemon Juicefresh squeezed
1 ½teaspoonApple Pie Spice
1tablespoonCoconut Sugar
For The Topping
1cupGluten-Free Flour
¼teaspoonSea Salt
½teaspoonBaking Powder
⅓cupCoconut Oilmelted
3tablespoonMaple Syrup
1teaspoonVanilla Extract
¼teaspoonApple Pie Spice
Instructions
Preheat the oven to 350 degrees
In a medium bowl, combine the sliced apples, 1 tablespoon gluten-free flour, lemon juice, apple pie spice and coconut sugar. Stir gently until the flour has dissolved.
In a small bowl, combine 1 cup gluten-free flour, sea salt, baking powder, coconut oil, maple syrup, vanilla extract and apple pie spice. Mix well until a smooth dough forms.
Transfer the apple mixture into a greased 9x9 baking or pie dish, then add a few pats of butter on top of the coated apples, then top with the dough. You can drop pieces of dough onto the fruit for a more rustic approach, or press the dough out and use a biscuit-cutter to create uniform pieces.
Bake for 35-40 minutes or until the fruit is bubbling and the topping is golden brown.
Remove from the oven and allow the cobbler to set for 10-15 min. Serve warm or at room temperature. Add a scoop of ice cream on-top if you choose!
