Why You'll Love This Recipe
- Super Easy: With just two ingredients and minimal work, you will have a delicious butter with very little effort!
- Perfect For Grilling: Layer on the smokey flavor, by using this on your grilled meats or veggies.
- Versatile: It can be used in countless ways—on bread, vegetables, seafood, and more!
Ingredients
- Grass-Fed Butter: Kerrygold is my go-to. Irish butter is a European-style butter that comes directly from Ireland. It’s made from grass-fed cows and has a higher fat content than regular butter, which gives it a richer texture. I recommend using the unsalted version as it allows you to control the salt quantity and quality.
- Sea Salt: I love using finishing salt in this recipe. Maldon’s Sea Salt is my favorite.
See the recipe card for full information on ingredients and quantities.
Substitutions And Variations
- Smoked Garlic Butter: Add 1-2 minced garlic cloves to the cast iron skillet for a garlic version.
- Smoked Herb Butter: Try adding your favorite herbs, like thyme, rosemary, or oregano to the skillet. The mixed herbs will infuse it with a wonderful flavor.
- Sweet Smoked Butter: You can also make a sweet variation by adding honey to the cast iron skillet.
- Spicy: Try adding a little bit of crushed red pepper flakes or dried ancho chili for a slightly spicy finish!
- Compound Butter: Add the chilled butter to a food processor or stand mixer with a few herbs. Pulse at a low speed, and voila you have an herb compound version.

Recipe FAQs
Hickory, applewood, or cherrywood are great wood chips for this recipe, as they will provide a subtle smoky flavor without too much smoke.
You will want to keep your pellet grill lower than 200 degrees to really infuse smoke into the butter. The smoke point is 300-350 degrees.
Brown butter is ordinary butter cooked until it melts and the milk solids turn a golden brown. This cooking process brings out deeper, more complex flavors and aromas. Smoked Butter is cooked at a lower temperature, and infused with smoke from the pellet grill.
