Are you tired of searching for a creamy Caesar dressing that's gluten-free and actually packs a ton of flavor? I know I was! I am a sucker for a good Caesar salad, my absolute favorite is from Hy Steakhouse, where they prepare it tableside. The dressing is rich, creamy, and perfectly balanced, and I wanted to recreate that at home.
Store-bought salad dressings just don’t cut it for me—they’re too runny and lack the bold flavor I crave. That’s why I’ve come up with this homemade version that’s as creamy and tangy as the best restaurant versions, without the hidden gluten—plus no raw eggs, or egg yolks needed! Trust me, once you try it, your salad experience will be 10 times better!

Ingredients
- Mayonnaise: Mayo adds a lot of richness and creaminess to the dressing. I recommend using an avocado oil-based mayo, like Chosen Foods.
- Greek Yogurt: I really like using half Greek yogurt, and half mayo as the yogurt also contributes to the creaminess, but it's lighter and adds a little boost of protein.
- Stone Ground Mustard: The mustard provides a tangy kick that helps to balance out the richness of the dressing. You can use stone ground or Dijon mustard.
- Garlic: You can make a lot of adjustments to a Caesar dressing, but one thing you can't omit is the garlic! For best results use fresh garlic cloves. Skip the garlic powder or the garlic in a jar. Fresh is best! I like my dressing to have a lot of kick, so feel free to reduce the amount you use.
- Coconut Aminos: Coconut aminos are what makes this dressing gluten-free! Typically Worcestershire sauce is used in caesar dressing, however, it does contain gluten. Coconut aminions provide a similar umami flavor but without the gluten.
- Anchovy Paste: If you don't like handling anchovy fillets, anchovy paste is a great alternative. I always keep a tube in my fridge, and it adds such a delicious flavor. If you really hate the taste of anchovies, you can leave it out—but I wouldn't recommend it!
- Lemon Juice: Fresh lemon juice provides a bright flavor and helps to lighten the dressing. Please avoid using lemon juice concentrate that comes in a bottle, use the real deal—freshly squeezed!
- Parmesan Cheese: For the best flavor, be sure to use high-quality, authentic Parmesan cheese. Grate it yourself for the freshest taste—pre-shredded cheese just doesn’t compare!

- No Anchovies: Skip the anchovy paste if you prefer a vegetarian version or if you’re not a fan of the fishy taste.
- More Zing: Add more lemon juice or a bit of red wine vinegar for extra tanginess.
