The second the temperature dips below 70 here in Texas, I'm ready for all the cozy food. The salads move out of the rotation, my Dutch oven comes back out, and I start craving soups, braised meats, pasta, and anything that makes the house smell amazing while it cooks.

These are some of my favorite fall dinner recipes for exactly that reason. There are quick 30-minute meals for busy weeknights, plenty of one-pot dinners, and a few low-and-slow recipes that are perfect for a Sunday at home. Everything is made with simple, real ingredients and, most importantly, plenty of flavor.
1. Dutch Oven Lasagna

If you love lasagna but don't love dealing with a bunch of separate pans, this Dutch Oven Lasagna is such a good one. I use cottage cheese in the filling for extra protein and a creamy texture, then everything gets layered and baked right in the Dutch oven.

This is also one of my favorite ways to use up leftover cooked chicken and turn it into an entirely different dinner.
