Expert Tips And Tricks
Don’t Fear The Fat: In order for this to whip up nicely, you will need to use cottage cheese that contains fat. Avoid using a fat-free variety as it will not whip up well.
Whip It Up: When whipping it up, make sure you only pulse long enough for the curds to disappear, leaving you with a creamy texture. If you pulse or blend for too long, you risk it separating.
Quality Is King: You will want to use good quality cottage cheese. My favorite brand is Good Culture. They only use organic skim milk, organic whole milk, organic cream, sea salt, and live and active cultures.
No Food Processor, No Problem: If you don't have a high-speed blender or a food processor, you can use an immersion blender.
