Cottage Cheese Banana Bread (Moist & High Protein)
This Cottage Cheese Banana Bread recipe is moist, naturally sweet, and higher in protein thanks to blended cottage cheese, giving it the perfect tender crumb. It comes together in under an hour and is such a good way to use up overripe bananas while adding a little extra protein to your day.
Add the dry ingredients to the wet ingredients and fold until combined, but do not overmix.
Pour the batter into a parchment-lined loaf pan. Slice a banana lengthwise and place it on top of the batter. Sprinkle a little bit of additional coconut sugar on top of the banana and batter.
