This mixed berry galette is surprisingly easy to make. Galettes are quite charming, in that each one has its own rustic appeal, and are not meant to look perfect.

Step 1: In the food processor, add flour, coconut sugar, and salt and pulse to combine. Step 2: Add butter and water then pulse a few times.

Step 3: Dough is considered ready when it begins to clump and resemble coarse sand. You should still be able to see chunks of butter.

Step 4: With your hands, shape the dough into a disc. Step 5: Wrap tightly with plastic-wrap and place in the fridge for 2 hours or overnight.

Step 6: Combine the berries, lemon zest, lemon juice, honey, vanilla, potato starch and salt in a medium sized bowl.

Step 7: Roll the dough out until it is about ⅛ inch thick. Step 8: Place the filling in the center and gently spread it out leaving about a 1 inch border.

Step 9: Fold edges over each other, working your way around the circle. Step 10: Brush the dough with egg wash, then sprinkle with coconut sugar.

Step 11: Bake at 400 degrees for 40 min. The crust should be brown and the filling bubbling. Allow the galette to cool then enjoy!
