These Green Chili Chicken Enchiladas are the perfect weeknight meal. You can even prepare the enchiladas in advance and bake them when you are ready to eat.

To make the enchiladas you just need some gluten-free tortillas, shredded chicken, green chilis, green enchilada sauce, and cheese.

Step 1: Cook and shred your chicken breast. Add it to a bowl along with the green chilis and toss to combine.

Step 2: Heat up your tortillas then top them with shredded chicken, and cheese. You can also add refried beans if you like.

Step 3: Continue filling and rolling the tortillas and line them up tightly in a baking dish.

Step 4: Pour the green enchilada sauce over the tortillas. Make sure the entire tortilla is covered to keep it from drying out.

Step 5: Sprinkle cheddar, or Monterey jack cheese on top of the enchiladas. Bake in the oven for 20-22 minutes or until bubbly.

Top the Green Chili Chicken Enchiladas with your favorite toppings such as cilantro, green onions, jalapeño, guac, salsa or sour cream. Enjoy!
