These Gluten-Free Green Chili Chicken Enchiladas are so easy to make. Gluten-Free tortillas are stuffed with shredded chicken, cheese and green chilis.

This recipe comes together quickly with pantry and fridge staples. You can also easily modify to fit your dietary needs.

You can either cook chicken in a crock pot or use rotisserie chicken. You will stuff the chicken and cheese in gluten-free tortillas then line them up in a baking dish.

Next add the gluten-free green enchilada sauce on top of the rolled tortillas.
