This Barbacoa recipe is a flavor-filled fiesta that also happens to be incredibly easy to make. The beef is seasoned and cooked low and slow until perfectly tender. 

This beef Barbacoa recipe is made with chuck roast and some pantry staples such as onions, chipotle in adobo, some seasonings, broth, and garlic.

Step 1: Preheat a large Dutch oven over medium-high heat.  2. Pat the chuck roast dry and season with sea salt and pepper.

Step 3: Add some olive oil to the dutch oven and sear the chuck roast on both sides until golden brown. Remove from heat and set aside.

Step 4: Reduce the heat and add the onion along with a pinch of salt and saute for about 5 minutes or until the onions have softened.

Step 5: Now add the garlic, oregano, cumin, cloves, chipotle in adobo, and green chilis and cook for thirty seconds or until fragrant.

Step 6: Add the broth and apple cider vinegar, and bring to a boil. Taste for seasonings, and add 1/4-1/2 tsp salt and 1/4 tsp pepper, if needed.

Step 7: Next add the chuck roast back into the dutch oven. Cover and cook in the oven for 3.5-4 hours or until fork tender.

Step 8: Once the meat is fork-tender, remove it from the Dutch oven and shred it. Pour the liquid from the Dutch oven into your blender and blend on high speed until smooth.

Step 9: Pour the blended liquid over the shredded Barbacoa and toss to combine. Top with a squeeze of fresh lime juice.

Beef Barbacoa is the perfect filling for tacos, burritos, and quesidillas. You can also make a delicious salad bowl using this meat.
