These Buffalo Chicken Stuffed Sweet Potatoes are the perfect weeknight meal. You can top with them blue-cheese crumbles or ranch and green onions for a healthy and balanced meal.
Use jewel or Garnet Sweet Potatoes, as they both have a sweet taste and are great for baking. Sweet Potatoes are also a good source of fiber, Vitamin C and beta-carotene.
Step 1: Cover the sweet potatoes in olive oil and season the skins with sea salt.
Step 2: Bake the sweet potatoes for 45-60 minutes or until soft to the touch.
Step 3: You can use store bought rotisserie chicken or slow cook chicken in a crock pot. Place the cooked chicken in a bowl and shred it using two forks.
Step 5: Fill the sweet potato with the buffalo chicken mixture, then place back in the oven for 5-10 minutes. Remove and top with green onions, and blue cheese.
