Chicken Sausage, Apples, and onions on a sheet pan.

We all know the struggle of trying to put a delicious and nutritious meal on the table after a long day of work or taking care of kiddos. Even though I love to cook there are plenty of days when I just don't want to be in the kitchen.

Those are the days when I gravitate to easy sheet pan meals. With minimal prep time and simple ingredients, you can still whip up a satisfying and wholesome meal on busy weeknights.

    Why You'll Love This Recipe

    • One Pan Meal: By cooking everything together on a single pan, you not only save time on prep and cleanup but you also allow the flavors to meld together.
    • Easy Meal Prep: This recipe is perfect for meal prepping. The leftovers reheat beautifully for a quick and tasty lunch or dinner.
    • Versatile: You can mix and match the flavors to accommodate any dietary or flavor preference.

    Ingredients

    • Sausage Links: Any chicken sausage will do, however, if you are gluten/dairy/sugar-free, be sure to check the label and read the ingredients. Now as far as flavor goes, I am a big fan of using half spicy chicken sausages and half chicken apple sausage, but again, do what works best for you. I really like the Aidells brand of chicken apple sausage.
    • Pink Lady Apples: Pink Lady apples are hands down, my favorite apple! They are tart with just a touch of sweetness. The combination of the rich sausage and the sweet/tart apple is just lovely! Honey-crisp apples are similar and would work well in this recipe. If you can't get your hands on either of those apples, use what you have!
    • Onion: Sweet onions are my favorite, but use a plain white onion or red onion if that's what you have on hand.
    • Garlic: If you are not a garlic fan leave it out, however, it adds another touch of sweetness once it caramelizes. You can also use a pinch of garlic powder if you don't have fresh garlic.
    • Extra-Virgin Olive Oil: You can also use avocado oil instead of olive oil.
    • Apple Cider Vinegar: This adds just a tiny bit of extra tartness!
    • Sauerkraut: You can go with plain or flavored Kraut with this recipe. Garlic Kraut is one of my go-to flavors.
    • Salt: Redmond's Sea Salt is a great option, as it includes trace minerals.

See the recipe card for full information on ingredients and quantities.

    Substitutions And Variations

    • Use Different Sausages: Swap the apple chicken sausage for your favorite variety of sausage. You can try turkey sausage, pork sausage, or even grass-fed beef sausage.
    • Add Extra Veggies: Try adding Brussels sprouts, bell peppers, green beans, or baby carrots to make this an even more nutrient-dense meal.
    • Add Carbs: This meal is relatively low-carb, but if you'd like to round it out feel free to add sweet potatoes, butternut squash, or baby potatoes cut into small pieces.
    • Sweet & Tangy: If you want to add even more flavor, you can drizzle the veggies with a little bit of pure maple syrup or balsamic vinegar before baking.

    Storage And Reheating

    • Storage: Any leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
