    This easy and creamy Blended Cottage Cheese recipe is a one-ingredient wonder. Protein-packed cottage cheese is whipped in the food processor creating a light, creamy, texture. Once blended to perfection, it can become the base for so many dishes. It's the perfect substitution for cream cheese, Greek yogurt, or sour cream.

    Cottage cheese recipes are having their moment right now. Everywhere you look there seems to be a new use for this long-standing curd. While it is certainly versatile and nutritious, not everyone can tolerate the texture of cottage cheese curds. If you've been wanting to partake in this trend, but have been put off by the texture, you will want to try this whipped variation, it is a game changer.

    I usually blend up an entire container on the weekend and keep it ready for quick Cottage Cheese Breakfast Bowls, or Cottage Cheese Toast.

    • Cottage Cheese: You will want to buy plain cottage cheese. My favorite brand is Good Culture. I love their lactose-free variety, which contains 4% milk fat, and it's a nice middle-of-the-road choice. It's just right, not too heavy and not too light. For this recipe, you can use either full-fat or low-fat cottage cheese, but avoid fat-free as it will not whip up nicely without the fat.

    • Make It Sweet: While this recipe is a savory version, you can also make a sweet variation with a few simple ingredients. Try adding a drizzle of honey or maple syrup and some cinnamon.
    • Herb It Up: If making the savory variation, you could add a handful of fresh herbs, like oregano, basil, thyme, or rosemary.
    • Adjust The Fat: For the best taste and texture I recommend using the full-fat variety, if you are looking for low-fat options, you can use the 2% milk-fat version.

    Step 1. Add the cottage cheese to your food processor or high-speed blender.

    Step 2. Blend for 30 seconds. Stop to scrape down the slides of the food processor or high speed blender with a spatula. Then continue to pulse until airy and creamy.

    Expert Tips And Tricks

    • Don't Fear The Fat: In order for this to whip up nicely, you will need to use cottage cheese that contains fat. Avoid using fat-free as it will not whip up well.
    • Whip It Up: When whipping or blending, make sure you only pulse it long enough for the curds to disappear, leaving you with a creamy texture. If you pulse or blend for too long, you risk it separating.
    • Quality Is King: Quality matters. My favorite brand is Good Culture. They only use organic skim milk, organic whole milk, organic cream, sea salt, and live and active cultures. 
    • No Food Processor, No Problem: If you don't have a high-speed blender or a food processor, you can use an immersion blender to whip it up.

    Serving Suggestions For Blended Cottage Cheese

    • Fruit Bowls: Try using it as a base for a fruit bowl. You can top it with any fresh fruit such as blueberries or fresh strawberries, granola, honey, and peanut butter for a filling high-protein breakfast, lunch, or snack.
    • Toast: Spread on a slice of toast, and add your favorite toppings. For a sweet treat, top the toast with sliced strawberries and honey. For a savory option try topping it with freshly sliced heirloom tomatoes, and a drizzle of olive oil.
    • Dip For Veggies Or Crackers: You can also use it as a low carb veggie dip. Pair it with some fresh veggies, pita chips, or crackers.
    • Mix It Into Pasta Sauces: Try adding it to your favorite pasta sauce to add depth, creaminess, and additional protein. It works so well in Gluten-Free Lasagna, Cottage Cheese Alfredo, or Creamy Lasagna Soup.
    • Cottage Cheese Dessert: Try making a Chocolate Mousse topped with whipped cream.
    • Smoothies: Add it to your favorite smoothie for a boost of protein and creaminess.

    Why are people blending cottage cheese?

    Blending smoothes out the chunky texture of the curds that can turn people off. By whipping it, you end up with a soft and creamy texture, which is a great option if you are not typically a fan of the texture.

    Why is my blended cottage cheese runny?

    It could be runny for a few reasons. If you blend it for too long, the heat from the blade can cause it to "break" and become runny. Be sure to blend just until it has a smooth consistency. Additionally, it could be runny if you are using a fat free variation. Be sure to use low-fat or full-fat variations for best results.
