    I've spent many years as a certified nutrition coach, and one of the biggest challenges my clients often faced was the belief that eating wholesome food meant mealtime had to be complicated-but that couldn't be further from the truth!

    One of my favorite simple solutions is cottage cheese, which has become an internet sensation for good reason. It's incredibly versatile and it's a great way to add protein to your diet.

    Ingredients

    • Cottage Cheese: My favorite brand of cottage cheese is Good Culture. I love their lactose-free variety, which contains 4% milk fat, and it's a nice middle-of-the-road choice. It's just right, not too heavy and not too light. For this recipe, you can use either full-fat cottage cheese or low-fat cottage cheese, but avoid fat free as it will not whip up nicely without the fat.
    • Fresh Fruit: For this recipe choose any seasonal fresh fruit you enjoy. Fresh berries such as raspberries, blueberries, and strawberries are great options and they are also high in vitamin C. You can also use mango, peaches, plums, and pineapple. Additionally, when choosing fruit, it is important to try to buy organic when you can. If you don't have fresh fruit on hand you can substitute it with frozen fruit, just thaw it in the refrigerator before you want to use it.
    • Honey: If you can, look for local raw and organic honey. You can find it at your farmer's market, also most local grocery stores carry it.
    • Granola: Make sure you read the labels and go for an organic, granola made with real food ingredients and no added sugar. Look for granola that is made with nuts, seeds, coconut flakes, and dried fruit. Seven Sundays is my favorite brand!

    Substitutions And Variations

    • Extra Sweetness: Add as much or as little sweetener as you like. You can skip the honey altogether, or replace it with organic maple syrup or agave nectar. 
    • Different Fruits: Use your favorite seasonal fruits, like fresh peaches, kiwis, mangoes, apples, or bananas.
    • Toppings: Experiment by adding your favorite toppings to this creamy base. A sprinkle of chia seeds, hemp seeds, homemade almond butter, or peanut butter would be an easy way to add in some healthy fats.
    • Savory Version: My personal favorite variation is the savory version where you top the bowl of cottage cheese with sliced cherry tomatoes, cucumber, sea salt, and olive oil. It's great for a light breakfast or a refreshing snack.

    • Whip It:  If you dislike the texture of cottage cheese, you've gotta try whipping it up in the food processor. It completely changes it into something light and creamy.
    • Use Good Quality: With just a few simple ingredients, make sure everything you use is good quality. Use fresh fruit, and a high-quality cottage cheese, such as Good Culture.

    Serving Suggestions

    • Serve this high-protein breakfast alongside Starbucks Copycat Egg Bites, or an Egg Bake Casserole.
    • Pair with your favorite toast or bagel.
    • Enjoy with a green smoothie, or alongside an Iced Maple Latte, or Matcha Latte.

    Storage And Reheating

    • Storage: If making this simple recipe for meal prep, store each component separately in an airtight container. Once opened cottage cheese can be stored in the fridge for 5-7 days.
    • Reheating: There is no need to reheat! Just remove it from the fridge and serve!

    Cottage Cheese is a great base for almost any fruit breakfast bowl. Tart berries, sweet cherries, and tropical fruits like mangos and pineapple go very well with cottage cheese. Play around with different flavors until you find your favorite fruit combination. Additionally, for best results try using fruits that are in season.

    How much protein is in cottage cheese?

    Depending on the brand one cup of cottage cheese contains roughly 14-16 grams of protein, making its protein per serving higher than Greek yogurt.

    Can I enjoy fruit breakfast bowls while on a low-carb diet?

    Yes, you can! Just stick to using full-fat cottage cheese and berries to keep the carbs lower.
