    I start every morning with some version of this protein-packed toast, and after testing hundreds of combinations in my kitchen, I can confidently say it never gets old! The endless variety of toppings means breakfast is always exciting, and I'm sharing all my expert tips to help you create the perfect cottage cheese toast every single time.

    • Cottage Cheese: One of my favorite brands is Good Culture, which you can find at most grocery stores. It's made with only real food ingredients, like milk, organic cream, and sea salt. For this recipe, you can use either full-fat cottage cheese or low-fat cottage cheese, but avoid fat-free cottage cheese as it does not taste the same!
    • Bread: You can use any kind of bread that you enjoy! I personally love baking sourdough bread, but you can use whole-grain bread, gluten-free bread, or any type of bread your heart desires.
    • Heirloom Tomatoes: Heirloom tomatoes are my absolute favorite variety to use in this recipe. They are packed with flavor and incredibly juicy. If it's not heirloom season, feel free to use any tomato you have on hand.
    • Fresh Basil: I grow basil in my garden and every summer I have so much of it! This is a great way to work it into recipes. If you don't have fresh basil you can use dried, but it's not the same.
    • Extra Virgin Olive Oil: Bring out your high-quality extra virgin olive oil for this! As you build out your pantry consider having a day-to-day olive oil that you use for cooking and a nice finishing oil that you use to top dishes with. 
    • Finishing Salt: Use a nice large flaked sea salt to top the dish. I'm talking big chunky flakes as they add a ton of flavor and crunch. My favorite brand is Maldon Sea Salt. You can buy a big tub at Costco!

    Substitutions And Variations

    • Bread Options: Use homemade sourdough toast (my favorite), gluten-free bread, whole grain bread, or rye.
    • Cottage Cheese Swaps: You don't have to blend your cottage cheese, but I'd encourage it! You can also use ricotta cheese, cream cheese or Greek Yogurt instead.
    • Savory Toasts: You can skip the tomato and basil combo and try smoked salmon with fresh dill and cucumber slices. 
    • Sweet Option: One of my favorite sweet combos is fresh figs with hot honey. You can also try adding your favorite berries, jam, or a drizzle of maple syrup.
    • Additional Toppings: Add other toppings like chia seeds, hemp seeds, micro greens, or fresh herbs.

    • Know What You Are Using: When shopping for ingredients, always be sure to read the labels and use good quality ingredients. A good rule of thumb is if you don’t know what an ingredient is, you probably don’t want to be eating it.
    • Don’t Fear The Fat: When selecting cottage cheese look for a plain variety that contains 2%-4% milk fat. Having a little fat in the cottage cheese is a great way to keep this easy breakfast nice and balanced across macronutrients.
    • Whip It Up: Don't skip the step of blending the cottage cheese. All you need to do is place it in the food processor and pulse until smooth. This is a great option for those who are turned off by the texture but want to enjoy the nutritional benefits.

    Serving Suggestions For Cottage Cheese Toast

    • Eggs: Serve alongside a hard-boiled egg, scrambled eggs, high protein egg bites, sheet pan breakfast hash, or an easy breakfast casserole.
    • Yogurt Bowl: Serve up a yogurt bowl with fresh fruit and granola.
    • Salad: Pair with a light refreshing spring salad, or grilled peach and burrata salad.
    • Soup: Creamy Vitamix Tomato Soup or your favorite vegetable soup.

    Storage Suggestions

    • Storage: This toast is best served right away. If you need to prep in advance, whip up your cottage cheese and store it in an airtight container in the fridge for 3-5 days.     Can I make this ahead for meal prep?

    I would not recommend preassembling the toasts, but you can prepare the toppings in advance and store them separately. Toast the bread and add cottage cheese just before eating.

    Can I make this dairy-free?

    You can swap out traditional cottage cheese for a plant-based version to make it dairy-free.

    Do I have to blend my cottage cheese?

    No, not at all! Blending it will create a smooth and creamy texture that makes it easy to spread on the toast, but it's not required.
