These Almond Butter Cups are a healthier (and IMHO) tastier version of a Reese's Peanut Butter Cup. They are so simple to make… as well as gluten-free, dairy-free and refined sugar-free. Added bonus: You only need three ingredients to make these delicious Almond Butter Cups.
Almond Butter Cups
Classic Reese’s Peanut Butter Cups were one of my favorite candies, growing up. The amount of Reese's Peanut Butter Cup Blizzards that I inhaled in High School is somewhat frightening! Thankfully I’ve had a few years to refine my eating habits; my love affair with Reese's Peanut Butter cups now revolves around ‘real’-food ingredients as opposed to the chemical-laden tongue-numbing bombshells that I had so fondly eaten as a kid.
While now there are many variations of nut butter cups out there that are far “healthier” than the classic, some brands like Justin's include ingredients such as Sunflower Lecithin (which tends to bother my stomach) and Cane Sugar, which is why I decided to make my own.
Why Should You Make These Almond Butter Cups?
These Almond Butter Cups are made with minimal ingredients. They are also gluten-free, dairy-free, refined sugar-free, and vegan. Not only do they taste amazing, but you can feel good knowing exactly what you are putting in your body.

Ingredients
Hu Dark Chocolate Gems: Hu’s Gems are made from organic cacao, unrefined organic coconut sugar, and organic fair-trade cocoa butter. I always keep these on hand for baking, and snacking.
Almond Butter: If using pre-packaged almond butter, check the ingredients list. You will want your almond butter to contain minimal ingredients (e.g. almonds, sea salt). For this recipe, I use my Homemade Almond Butter, but I leave out the honey. You can also substitute with any nut-butter you like!
Flaky Sea Salt: This is optional, but it adds a nice touch when sprinkled on top of the Almond Butter Cups. I mean, who doesn't love a sweet and slightly salty combo?! I absolutely love Maldon’s Sea Salt.

Instructions
- Place the almond butter in the freezer for 5-10 minutes.
- Line a muffin tin with 10 paper cups.
- Over a double boiler, melt the chocolate gems, and continue to stir while the chocolate melts.
- Pour 1 tablespoon of the melted chocolate in the bottom of each lined muffin tin.
- Once the almond butter has firmed up a bit, remove it from the freezer.
- Measure about 2 teaspoon of Almond butter, and form a small disc with your hands.
- Place the almond butter disc on top of the melted chocolate, in the center of the muffin tin.
- Continue the process for all 10 muffin tins.
- Add about 1 ½ tablespoons of melted chocolate on top of the almond butter. Sprinkle flakey sea salt on top of each cup.
- Place in the freezer for 30 minutes, then enjoy!
How to Serve:
Allow the cups to firm up in the freezer. Once they have set, let the Almond Butter Cups come up to room temperature before serving.
How to Store:
Store in the fridge for 1 week or on the freezer for up to 3 months.
